Why do you boil the zuchinni? I'm certainly no Gina, that's for sure! Thank you, Gina! You all know how much I love enchiladas, well these zucchini enchiladas are huge and filling,… Thanks! Does anyone know if this would work if they were frozen after stuffing the zucchini but before cooking? We live in Switzerland, and I can't get Chipotle Chiles in Adobo sauce. Keep up the excellent work. And finally, I like to blanch the zucchini first so that it bakes quicker, but if that seems like too much work, just bake it an additional 10 minutes and it should be fine. These were amazing GINA!
